The process of thermo-humidity treatment of carp with pre-vacuum packaging. Established process of mass loss in the packed and unpacked samples of carp treated with the wetting fluid and without moisture, as well as in samples cooked in the traditional way. The lowest process loss had packed the samples treated with a wetting fluid, and the highest were achieved in the unpackaged samples processed without wetting fluid. Submitted adiabatic dependence of the duration of heat treatment temperature of samples of carp. It is noted that with increasing duration of heat treatment temperature is reduced for the packaged and unpackaged samples treated with a wetting fluid and without humidification.
