The problem of preservation and improvement of health of the population of Russia is a state priority. The last decades there is noticeable growth of part of the population of advanced age. Now in Russia about 40 million people are is more senior than 70 years, their share in the total number of the population exceeded 20 %. Development in the fi eld of identifi cation of effective measures for increase in creative longevity of this contingent of the population, preservation of its health and prevention of diseases is actual and has social, economic and political value. For such considerable part of the population the most important factor of a healthy old age is a balanced diet. In this regard the importance of functional foodstuff which contain the ingredients increasing resilience of a human body to diseases increases, allowing it to keep long time an active way of life. The basic principles gerodietetiki, the science studying nature of a food of people of the senior age groups are defi ned. Optimum food for people of advanced age at the expense of natural components of food are offered. The general recommendations of a gerodiyetichesky orientation which open ample opportunities of optimization of a food of elderly people, increases of potential of their health, a suspension as a whole developments of presenilation, braking of vozrastozavisimy pathology are made.
